MORISCOS

Ingredients 

For the tomato base
  • 3 cans chopped tomatoes
  • 1 small can tomato paste
  • 2 large onions – chopped
  • 2-3 cloves garlic – chopped
  • 3 tbsp vegetable oil
  • 2 tsp fry ground fennel
  • 2 heaped tsp smoked paprika
  • 2 tsp turmeric
  • 1 tsp dry ginger
  • 1 tsp cinnamon
  • 3 bay leaves
  • 1 tbsp dry oregano
  • about 1 liter chicken stock
  • juice and zest of two lemons
  • 2 tbsp sugar
Fresh fish
  • 400gr yellow tail – green on SASSI list
  • 800gr hake – green on SASSI list
  • 2 kg mussels – green on SASSI list
  • 1 medium crab 
  • 2 kg prawns – orange on SASSI list



  1. Start to get your fire going with charcoal and when you have a few coals, place your pot over the fire and when the pot is hot, add the oil, onion, garlic and all the spices. Stir with a wooden spoon until your onions are soft lightly caramelized. Add the all the other sauce ingredients and bring to a light simmer. Place the lid of the pot back on and relax while the sauce is cooking. Feed your fire with thin wood so that the sauce just bubbles. When the sauce is thick and wants to start catching at the bottom, add more hot water and keep reducing the sauce. Remember the longer it cooks, the better it gets.Taste the sauce and adjust seasoning to your taste.
  2. When you are happy, I was after about 1 hour, add the seafood and some salt and place the lid back on. Once all the mussels are open (discard the ones that don’t), the prawns are cooked, the legs of the mussels comes off easily when pulled and the fish is flaking, your pot is ready. Place the pot on the table with heaps of crusty bread and a lemon aioli.

MAAFE

Ingredients 
  • 400g Chopped or Minced Beef 
  •  400g of Tinned Tomatoes
  •  two onions 
  • 5-6 medium sized Carrots
  • 1 Aubergine 
  • 3-4 heaped tablespoons of Peanut Butter 
  • 1 tablespoon of Chopped or Dried Ginger
  •  1 teaspoon of Thyme 
  •  a pinch of Mixed Herbs 

 Hot Sauce to taste
  1. Combine the Tomatoes, Peanut Butter, Ginger, Thyme and Mixed Herbs with a little water to form a thin paste.
  2. Chop the Onions roughly and the Carrots/ Aubergine into small even pieces.
  3. Fry the Beef until it is lightly cooked all over in a pan with a tight fitting lid (a Dutch pot or a pressure cooker set to the off position works very well).
  4. Add all of the ingredients to the pan and stir in, season heavily with Salt and Pepper. Bring just to the boil, turn the heat right down and then tightly fix the lid in place and simmer on as low a temperature as possible for one and a half to two hours.
  5. Check once or twice and add a small amount of Water if needed.
  6. Serve with Rice and Beans.

UGALI

Ingredientes

- Caldo de pollo
- Sal
- Cualquier cereal pero se recomienda harina de maiz
- Agua

Preparación

  1. Este es uno de los alimentos mas frecuentes en el Este y Oeste de África. Es una papilla que esta hecha de maíz fresco tras machacarlo, es ese almidón que al cocinarlo en agua hirviendo se vuelve consistente, es utilizado en el desayuno llamado Uji (Ogi, en el este de África), y si esa masa se vuelve consistente y fácilmente se puede hacer una bola sera llamada Ugali (Agidi en el este de Africa. Para que este cereal adquiera el sabor que es muy importante se cocinara en el caldo sea de pollo o carne envés del agua. Los cereales absorben el sabor y es un excelente acompañamiento para las carnes. En Swahili cualquier engrudo o este tipo de papilla es llamado Ugali.
  2. Hervir 1 litro de agua o caldo de pollo, 1 cucharadita de sal y 1 taza de cualquier cereal blanco. Remover el cereal de acuerdo a las intrusiones dadas por el paquete hasta que quede espesa la masa, mantenerla caliente, por ejemplo al vapor hasta que se sirva.

CUSCÚS CON POLLO Y VERDURAS

Ingredientes para 4 personas
  • 300 g de sémola de cuscús de tamaño mediano precocinada
  • El doble de su volumen en caldo de pollo o agua
  • Dos contramuslos de pollo troceados
  • 1 cebolla
  • 2 tomates maduros
  • 100 g de garbanzo cocido
  • 1 calabacín
  • 3 zanahorias
  • 2 nabos
  • 100 g de calabaza pelada
  • 50 g de pasas
  • 1 cucharadita de cúrcuma
  • 1 cucharadita de jengibre molido
  • 1 pizca de clavos molidos
  • 1 pizca de guindillas molidas
  • 1 pizca de pimienta negra molida, Unas hebras de azafrán
  • 1 rama de canela
  • 1 ramita de perejil
  • 1 ramita de cilantro
  • 1 hoja de laurel
Preparación
  1. Pon a hidratar en frío la sémola con su mismo volumen de agua o caldo de pollo durante una hora.
  2. Marca el pollo hasta que quede dorado
  3. Retíralo y prepara un sofrito con la cebolla picada y el tomate pelado, sin petitas y cortado en dados.
  4. Añade de nuevo las carnes, agrega las especias, cubre con el caldo y deja cocer veinte minutos.
  5. Añade la calabaza, la zanahoria, el nabo y las pasas.
  6. Al cabo de cinco minutos añade el calabacín y deja que se cocine otros cinco minutos.
  7. Añade al cuscús una cucharada de mantequilla a temperatura ambiente y sepáralo con las manos.
  8. Haz con él una corona, sirve la carne en el agujero del centro, las verduras y los garbanzos cocidos alrededor y moja con el resto del caldo caliente.
